One of my favorite mashed potatoes recipe uses corn as an ingredient. What could be sweeter or homier or more comforting than potatoes mashed, whipped, riced, beaten - whatever word you choose - with golden nuggets of corn? The texture is creamy with a slight crunch not due to lumpy potatoes, and the flavor is subtle and addictive.

Here's a recipe to cook mashed potato with corn that serves 4 people:

Ingredients to Mashed Potatoes Recipe with Corn

o 4 medium baking potatoes (Be careful don't use instant mashed potatoes!)

o 1/2 cup of milk

o 2 ears fresh sweet corn (to make 1 cup kernels)

o 4 tablespoons butter

o Salt, freshly ground black pepper, and cayenne

Directions : How to cook Mashed Potatoes Recipe with Corn

1. To start, peel all the potatoes and cut them in a quarter.

2. Next bring a saucepan of salted water to the boil water. Add the potatoes and boil them. Partially covered the saucepan and let it sit for 15 to 20 minutes. You'll know the potatoes are ready once they are tender.

3. While the potatoes are cooking, heat the milk in a small saucepan and then add the raw corn kernels, butter, and seasonings.

4. Heat up all of ingredients : milk, raw corn kernels, butter and seasonings until the butter melts.

5. When the potatoes are done, putting them through a ricer or coarse strainer. Mix in the corn and milk mixture and beat until fluffy. If the potatoes are too stiff, add a little more milk.
